5 Fun (and Easy) Salad Recipes

I love a good salad. Have you ever seen those ‘laughing with your salad’ stock photos? You know the ones. Where a woman holds her salad and looks out of frame, laughing her head off because her salad is hilarious? If you don’t know what I mean, google ‘laughing with salad’ on Google Images and you’ll get it. But anyways, back to the purpose of this post: fun and easy salad recipes for you to add into your meal rotation. Because honestly, who doesn’t love a fresh meal that is good for your taste buds and your health?

Salad recipes are kind of weird. Don’t get me wrong – I really do love salads (especially when they are filled with fun ingredients like fresh tomatoes, nuts, and cheese) but recipes for them always make me laugh a little (but not as hard as those laughing salad models). I don’t need anyone to tell me the ‘specific’ amount of tomatoes or cheese to make a delicious salad. So these recipes have more of ‘ingredient lists’ instead of specific measurements. I hope you dig in, fill up, and maybe send me a great ‘laughing with your salad’ stock photo recreation if you are in the mood.

Greek Salad with Goat Feta

Chop up some cucumbers, cherry tomatoes, yellow bell peppers, and red onion. Add a very small dash of olive oil, lemon juice, salt, pepper, and dried dill. And my favourite thing to sprinkle on top? Goat feta! It’s about $2-3 more than regular feta but it is PHENOMENAL on greek salad.

Kale Caesar Salad

Chop up kale leaves, red onion, and broccoli. Make some crispy chickpeas to add on top of the salad. I like to top mine with yeshi dressing (made locally on Vancouver Island).

Fruit Salad with Lime

By fruit salad I mean any kind of fruit chopped up in a bowl for breakfast! My favourite fruits to add to my bowl for a fresh breakfast are nectarines, mangoes, and berries (especially blueberries). And the secret to making the most of the fruit salad? A squirt of lime juice on top.

Pasta Salad with B12

Make the pasta of your choice (I love rotini). Chop up spinach, cherry tomatoes, cucumber, red onion, and cheddar cheese. Add a dash of olive oil, black pepper, and a sprinkle of nutritional yeast. Nutritional yeast is a great source of Vitamin B12.

Taco Salad

Chop up spinach as the base of the salad. Chop orange bell peppers, cherry tomatoes, and red onion. Add corn, avocado, and black beans. For a special topping? Finely chopped cilantro and crumbled tortilla chips for flavour and crunch.
